A Great Braai Needs More Than Meat

A Great Braai Needs More Than Meat

There’s a particular rhythm to a South African braai. Someone is getting the fire going, someone is keeping an eye on the meat, and there’s usually a little debate about when exactly everything is ready to eat.

But while the meat might get most of the attention, it’s rarely the only thing people remember.

Think about the table around it: bowls of colourful salad, fresh bread waiting to be torn apart, something crisp and refreshing between bites, and a few dishes that somehow disappear before the meat has even made it onto everyone’s plate.

The sides aren’t simply there to fill space. They bring freshness, texture and variety to the meal, helping everything on the table work a little harder.

Why Fresh Sides Matter

A braai naturally brings plenty of rich, savoury flavours to the table. Smoky meat, marinades and sauces all have their place, but they become even more enjoyable when there’s something fresh alongside them.

A fresh salad can add acidity and crunch, while crisp vegetables bring colour and a lighter texture. A good dressing can cut through richer flavours and give the next bite a completely different character.

That contrast is what keeps the table interesting.

Rather than treating salads as something you add because you should, think about what they bring to the meal. Fresh ingredients can provide the balance that makes everything else on the plate taste even better.

Build the Table Around Variety

You don’t need twenty different dishes to make a braai feel generous. A few thoughtfully chosen options can create plenty of variety.

When planning your sides, think about different textures and flavours rather than several versions of the same thing. Something crisp alongside something creamy, something fresh alongside something savoury, and something simple that everyone can reach for.

A good starting point could include:

  • A fresh, colourful salad with plenty of texture.
  • Seasonal vegetables or a crisp vegetable side.
  • Freshly baked bread for accompanying everything from the first plate to the last.
  • A selection of deli favourites for guests to help themselves to.
  • Something sweet to finish, particularly if the braai stretches into the afternoon.

The aim is to create a table where everyone can find something they want to go back for.

Salads Can Be the Dish Everyone Goes Back For

There’s a difference between a salad that’s simply been placed on the table and one that’s been thoughtfully put together.

Good salads have layers. Crisp vegetables, fresh leaves, creamy ingredients, roasted elements, herbs and grains can all bring something different, particularly when tied together with a dressing that works with the other flavours on the table.

At Fournos, our deli range includes freshly prepared salads and other favourites that make it easier to add variety to a braai without preparing every dish yourself.

One generous salad can be enough to bring freshness to the table, while a few different options can give guests plenty to graze on throughout the day.

Don't Forget the Bread

A braai table without fresh bread always feels like something is missing.

There’s something wonderfully uncomplicated about a loaf or basket of freshly baked bread sitting in the middle of the table. Tear off a piece to go with a salad, use it to soak up the last of a sauce or enjoy it while you’re waiting for the next plate of food.

Our freshly baked bread range makes an easy addition to a braai spread, bringing warmth, texture and that unmistakable aroma of bread that’s been baked with care.

The Table Is Part of the Celebration

Heritage Day is a good reminder of just how much food brings people together. The braai has become part of how many South Africans celebrate, catch up and spend time around a table, with every family having its own favourite dishes and traditions.

There isn’t one correct way to build the table. Some will have a few well-loved sides, while others will make room for salads, breads, vegetables and enough food to keep everyone grazing long after the meat has been served.

That’s the beauty of a good braai. The food coming off the fire might be the centre of attention, but the sides are what bring colour, freshness and variety to the plate.

And sometimes, they’re the dishes that disappear first.
